Delicious Broccoli Rabe Recipe + Info on Watermelon and Cellulite

What's up Nibblers?!  Spring is a comin' (actually, in the NE, it's pretty much here)!  I have been hitting my local Green Market hard and have a new obsession:  Broccoli Rabe.  If you don't know about it, you are in for a treat.  This tender green goes with everything and cooks up in a matter of minutes.  AND it's CRAZY good for you- one 3.5oz serving accounts for half your daily requirement of vitamins A and C, both of these vitamins fight free radicals.  It's a good source of folate, potassium, fiber and calcium.  It's a powerhouse!  When picking some up look for a full bunch that is green, avoid yellow leaves and flowering buds (you can eat the flower looking part but it should be green), and dry stems.  Also, smell it, if it smells like cabbage it is past it's prime.  Here is a fast and easy Broccoli Rabe recipe- ENJOY!

1 bunch broccoli rabe- cleaned and chopped
1 large garlic clove, minced
2 tbsp. olive oil

Heat olive oil in a large skillet over medium high heat.  Add the garlic and sautee for about 1 minute stirring to infuse the oil.  Add broccoli rabe, toss to coat the leaves in the oil.  Reduce heat to low.  Place lid on pan for about 2 minutes.  Serve immediately!



I just learned a fun fact!  Eating Watermelon is a great way to help fight cellulite!  Watermelon has a large water content and water is a great was to get rid of unwanted cellulite.   It is also loaded with vitamins and antioxidants!  So you are doing a lot of good things to your body when eating delicious watermelon!  I love to have a frozen treat in the summer time so I am going to search for a good frozen watermelon recipe!
