Staying Cool with your Girl Heather!
We are in the dog days of summer Nibblers! As much as I dread going out into the heat, I love how many fruits and veggies you can get at this time of the year- and LOCAL at that! Nothing is better than purchasing a bunch of veg that looks great- cooking it up and viola! You’ve got a summer hit! Here’s a recipe I threw together last week. Quinoa is great vehicle for summer salads so just mix it up and go for it! Stay cool!
Quinoa summer salad:
1 cup of cooked quinoa
1 orange bell pepper, diced
2 ears of corn cut from the cob (boil for 5 minutes and then blanch the corn before cutting it from the cob)
1 onion, diced
1/2 pint cherry tomatoes
1 small zucchini, diced
1/4 cup sunflower seeds
Feta cheese (optional)
Nutritional Yeast
Salt and pepper to taste
1 tbsp olive oil
In a large sauce pan heat olive oil. Add the onion, sautee for 1-2 minutes. Add zucchini, salt and pepper, cook for 2 minutes. Add bell pepper and tomatoes, cook for one more minute. In a large serving bowl combine all ingredients and stir well. Divide into 4 bowls and sprinkle with feta cheese or nutritional yeast- or both! Enjoy!
