Fall Apple Sauce


 Wassup Nibblers?!

The fall is officially here.  It is, personally, my favorite season.  I like nothing better than buying a bushel of apples (Ok- maybe not quite that many- did you know there are 42-48lbs in a bushel?  That’s about 126 apples!), and making apple sauce which then makes my whole house smell AMAZING.

A few weeks ago, I was able to do some volunteer work with Wellness In the Schools:  http://wellnessintheschools.org/  This is a very cool organization committed to getting kids fed, and educated about the foods they put in their bodies.  We made apple sauce with local NY State apples and the kids loved it.  The photos in this blog are from my time at PS 33 in Chelsea.

Get out to your local green market ,or better yet, go apple picking this season and get creative with apples.  They are fantastic for your health are rich in dietary fiber, vitamin C, a great source of B Complex vitamins such as riboflavin, thiamin, & B6 (but be sure to keep the skins on to reap these benefits completely).  Below is my favorite apple sauce recipe.  Try it out- you can even eliminate the sugar completely.  It stores very well in the fridge for about a week and it can also be frozen for later use.  Enjoy!  -HKT
HKT’s Fall Apple Sauce

3-4lbs local apples- cored and sliced equally (leave the skin on!  It’s good for you.)
1 cinnamon stick
1/4 cup sugar (aim for unrefined organic cane sugar- like the cane sugar we use in NibMor Chocolate bars and Daily Dose OR Coconut Palm Sugar which we use in NibMor’s Drinking Chocolate)
1 cup water


Place all ingredients in a large pot.  Cover, boil and then lower the heat for about 30mins (or until the apples are soft).    Remove from heat and remove the cinnamon stick.   Mash the apples with a potato masher. Serve apple sauce hot or refrigerate for later use.  If you choose to freeze it, it will last for about a year in your freezer.
