JLove’s Interview: The Family Interview!!

 
I love this time of year because it is time that I spend with the friends and family that I love and adore. I decided to do a video interview of my own family and ask them what things they are excited about heading into 2013. From soccer to biking to backpacking and water sports they have some fun physical activities planned. I didn't realize that my own brother was an EXTREME bicyclist. A great representation of NibMor's Extreme bar. So cool!!

Holiday Parties and Some Tips!



Hey Nibblers!!  

Tis' the season for Holiday Parties!  But be careful, don’t over indulge on drinks & food!    There are some things you can do to prevent your self from eating too many bite sizes appetizers or drinking too much Eggnog!  I promise, the next day you will feel much better then if you were to over indulge.  Here are some pointers:



  • Eat an apple before you go to a party.  Your body won’t feel as hungry for those unhealthy finger foods!
  • Have some crudités with hummus.   This is healthy and satisfying snack to have before your party!
  • Drink lots of water to help you stay hydrated and your body will feel full.
  • Don’t skimp on eating the day of the party because once you get there you will most likely eat more then you normally would!
  • And most of all, enjoy yourself because the holidays can be stressful!

Nib-Tastic Thanksgiving Recipes!

Nibblers!  
Thanksgiving is here!  Yahoo- so you you want some of our Turkey Day recipes?  Here ya go.  Enjoy!
Happy Thanksgiving!  The NibMor Gals (Heather & Jennifer)
Menu:
Tofurkey:  see box for cooking time and recipe.
Brussel Sprouts and Carrots:
Slice up about 2 cups of sprouts and 1 carrot.  Toss with 2 tablespoons olive oil a few dashes of salt and pepper and mix well.  Surround your tofurkey roast and bake for the same amount of time as the tofurkey.
Cranberry Sauce:
2/3 cup water
1/2 cup succanat (or any other sugar you’d like to use- agave works nicely too, you can cut that down to 1/4 cup)
1 tbsp orange zest
1 bag organic cranberries
Over a medium heat, heat the water, sugar and zest until the sugar starts to dissolve.  Add the cranberries and heat until they start to ‘pop’.  Turn off the heat and use an immersion blender to blend.  Pour into a dish and refrigerate.  Serve cooled.
Millet Cauliflower Mash
1 cup millet, rinsed
3 cups veggie stock
1 onion, diced
2 cups cauliflower florets, chopped small
2 tbsp olive oil
3 garlic cloves, chopped
1 tbsp tarragon
Sea salt and black pepper to taste
Heat olive oil over medium heat.  Add garlic and onion and tarragon, cook until soft, about 2 mins.  Add millet and toast for about a minute.  Pour in veggie stock and florets, bring to a boil.  Reduce to a simmer and cover for 30mins.  Check in periodically to make sure the bottom is not burning.  Once fully cooked, turn off heat and use a masher to mash down to a mashed potato consistency.  Enjoy!

Pre- T-Giving Day Tips and Tune!



Hey Nibblers! 
I don't know about you but I love the holidays!  I can't believe Thanksgiving is almost here.  Time sure does fly.  I hate to say it but I am already playing holiday music in the office-sorry ladies (our office if full of women).  One of the reasons I love to celebrate the holidays is because of Traditions we have in my family.  We all love to cook together and help each other out.  My siblings and I are my mother's sou chefs in the kitchen and we couldn't be any happier with that role because it saves my mom time when she is trying to cook a big meal for the entire family.  My favorite tradition is baking my mom's delicious apple pie!  After watching her do it each year I was able to learn about how to make the perfect apple pie.  This year I will be making pie with my mom for Thanksgiving and then again for Christmas.  Apple pie can be loaded with sugar so I might try to swap the sugar with Coconut Palm Sugar!  This will help make my apple pie a little bit healthier and even tastier!  So nibblers, if you want to make something a little bit more healthier for the holidays swap the bleached white sugar to something like Organic Coconut Palm Sugar or Organic Cane Sugar!  Wishing everyone a wonderful Thanksgiving!

JLove’s Interview: Halloween Healthy Style!!
 
Halloween is this week and kids of all ages are getting ready to do one of their all time annual highlights >> dressing up in costumes, going to parties and getting lots of treats. Tis' the season for candy! Parents are you concerned with how to encourage your kids to make healthy choices and how to manage the sugar intake?
 
Latham Thomas, a maternity lifestyle maven, wellness & birth coach, and mommy shared her thoughts, with me, on how to successfully navigate through this fun-loving holiday.
 
JLove: Halloween is a fun time of year that kids love and cherish. Yet, it can be a parent's nightmare. What do you see as the biggest challenges for parents during Halloween? 
 
Latham: Parents are faced with the candy craze and sorting through the plethora of sweets laden with behavior altering chemicals, additives, and an enormous amount of sugar. When I was growing up parents were concerned with the sweet factor, but now you have to think about the chemical dyes- some of which are known carcinogens, as well as high fructose corn syrup- which is in everything and it's making our kids hyperactive and obese.
 
JLove: Yes! Today we really do have to read what's in our foods and ask questions about how they are made. Sometimes we don't even know what is in our foods simply based on the label alone. For example, genetically modified food (GMOs) are not required to be labeled, so buying organic or buying food that is verified non-GMO is becoming increasingly important. What are your thoughts on how to create a healthy Halloween experience?
 
Latham: My healthy Halloween entails baking homemade cookies, granola, "caramel" popcorn with brown rice syrup, and integrating these treats- making pumpkin soup with cinnamon- my son loves that! There is nothing wrong with trick-or-treating and getting candy, but as parents we do need to sort through the candy and teach our children what's inside so they are aware.
 
JLove: Wow!!! I want to come over to your house for Halloween. That all sounds amazing. Sorting through candy and having a conversation about food with your kids is a great idea. What do you think are the best treats to give out as trick-or-treaters come by?
 
Latham: I like to give out Health Warrior Chia Bars, they are small and pack a lot of protein. The best is the teeny NibMor squares though- it's just enough chocolate and it's actually good for you.
 
JLove: Oh, you mean NibMor's 'Daily Dose of Dark'. Yes, I couldn't agree more and each piece of chocolate only has 3g of sugar. So, how can parents best manage their kid's sugar rush?
 
Latham: A few ways you can manage the sugar high- make sure your kids eat a healthy fortified meal before going to any Halloween festivities. Dole out the candy overtime- award them with a piece of candy after completing a task instead of letting it be a candy free-for-all. Select better quality sweets and have those on hand.
 
JLove: Great ideas. We hear a lot about moderation, how can parents manage this with their kids during Halloween?
 
Latham: Yes, moderation is important- but kids get enough sweet in their daily lives because most of the foods targeted towards them are sugar laden. So I don't make it a big deal in my home. If you can set the tone your kids will follow. Create a healthy dessert that they can make with you at home. Alternatively keep the approved sweets on hand and give them a treat once or twice a week, that way they don't go crazy when Halloween comes.
 
JLove: That sounds reasonable. Ok, Latham, what are the key take-away points for a healthy, happy and fun Halloween experience for kids and parents?
 
Latham: Know what's in the candy, have fun, swap out the bad stuff for the better stuff. It's only on day per year- but you are teaching healthy lifestyle habits so be mindful.

Shape- Tastic!

Hey Nibblers!

I love reading SHAPE magazine and recently Jennifer Love forwarded me a great article she read on SHAPE.com which talked about another great benefit when eating Chocolate!  They were talking about how beneficial chocolate is for your brain.  A study was performed on how there are more Nobel Prize winners in countries with the highest chocolate consumption.  So Nibblers, eat more dark chocolate!  I find it to be so wonderful that something I love eating can be so beneficial for my health and my brain!  I am glad I love eating our Extreme bar because it is 80% cacao which means this high cacao content will give my brain an extra boost!  In fact all of our chocolate has a high cacao content!  Thank you Cynthia Sass for writing a intriguing article on SHAPE.com!  I would also like to thank Heather and Jennifer for introducing me to dark chocolate over 2 years ago!  I used to only like milk chocolate but now all I can have is dark chocolate!
